The World’s Best Cupcake Recipe!
Chocolate Cupcakes with Cream Cheese Filling
(This recipe is from John at the University of Toronto by way of Shelly at Carleton University).
FILLING:
1 8-oz pkg cream cheese
1 6-oz pkg chocolate chips
1 egg
1/3 cup sugar
1/2 tsp salt
Blend cheese, egg, sugar and salt. Add chips and set aside.
CUPCAKE BATTER
1 1/2 cups sifted flour
1 cup sugar
1/4 cup cocoa
1 Tbsp vinegar
1 tsp baking soda
1/2 tsp salt
1 cup water
1/3 cup oil (Crisco)
1 tsp vanilla
Blend in bowl. Fill large paper-lined muffin cups with batter to 1/3 full. Drop 1 heaping teaspoon of cheese mixture into each. Make the cheese mixture come out even. (Depending on how the teaspoon of filling is placed in the batter will determine if the filling is visible when the cupcake is done).
Bake at 350 F for 20-25 minutes.
Finally! it’s Bubble Season …
Baby Shampoo Version
Mix these together gently (the glycerine amount can be tweaked … usually will be about 1-3 teaspoons per litre).
Let the solution stand for 24 hours or so (to strengthen the “bubble bonds”) and have fun!
Please note: If you have a high amount of iron or mineral in your local water use distilled water (can buy at drugstore).
You can also double the amount of shampoo to make the solution more durable and thicker
Dish Soap Version
Mix these together gently (the glycerine amount can be tweaked … usually will be about 1-3 teaspoons per litre).

Bounce-tastic Bubbles
Stir gelatin into hot water and then add shampoo and glycerine … bubbles will bounce!
(if the solution cools and starts to gel … gently reheat in microwave for 1 – 2 minutes)
